- 1 bunch asparagus, trimmed and cut into bite-sized pieces
- 2 tablespoons olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- Salt and pepper, to taste
- Optional: fresh herbs (like parsley or thyme), garlic powder
Instructions:
- Cook the Quinoa:
- Rinse the quinoa under cold water.
- In a medium saucepan, bring the water or chicken broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- Prepare the Chicken and Asparagus:
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken tenders with salt, pepper, and optional garlic powder. Cook the chicken for about 3-4 minutes on each side or until golden and cooked through.

- Remove the chicken from the skillet and set aside.
